Actually, I never really knew anything about emulsions (and by extension, I can't recall writing about it either), but that was a really useful link. I'm not much in the habit of reading food blogs (except for Mark Bittman, with whom I'm mildly obsessed), but you're right, the Food Lab seems super handy.
